In the beginning…there was Gruyère. Enamored with this majestic alpine cheese, our original mission as a company was to craft a Gruyère as noble as the Swiss classic. Maintaining the essential details of authenticity is not an easy task. Our cheesemakers are trained in time-honored techniques that date back to the twelfth century. In our custom-made Swiss copper vats, our craftsmen turn fresh milk from select Southern Wisconsin farms into morsels of curd, which are carefully pressed into forms. Aging takes place in our temperature- and humidity-controlled curing cellars, which are tended by a team of Cellar Masters who carefully watch over the cheese throughout the curing process. These efforts culminate in a critically acclaimed, full-flavored, robust cheese. Small eyes dot the rich, ivory interior of Grand Cru Gruyère, and the complex flavors include nutty, earthy, and fruity undertones. While Grand Cru Gruyère pays homage to the Swiss tradition of cheesemaking, it also captures the distinct Southern Wisconsin terroir of lush pastures and pristine air, making it a shining example of American artisanal cheesemaking. According to preference, the cheese is offered in various degrees of maturity:
Grand Cru Gruyère: aged a minimum of four months, Grand Cru Gruyere is the cook’s best friend. It is the staple ingredient in quiches, omelets, fondues, au gratin dishes, croques-monsieur, and “real” French onion soup. Sliced, shredded, and melted, it enhances virtually any dish in which cheese is a key player, from pizza to panini to macaroni and cheese.
Grand Cru Gruyère Reserve: aged a minimum of six months, Grand Cru Gruyère Reserve has a heightened flavor, and lends itself to culinary applications as well as snacking enjoyment. Looking to reduce the fat content in your recipes? Grand Cru Gruyère Reserve allows you to use less cheese, while delivering the same rich, satisfying flavor that your recipes rely on.
Grand Cru Gruyère Surchoix: aged nine months…and more. Our Cellar Master hand-selects the finest wheels of Gruyère for additional curing…not all cheeses can attain the coveted status of Surchoix (from the French, meaning “top choice”). This cheese doesn’t require accoutrements; enjoy Grand Cru Gruyère Surchoix on its own, perhaps with a glass of white wine such as Riesling or Gewurtztraminer. For those looking to add variety, try pairing Grand Cru Gruyère Surchoix dried apricots, almonds, cashews, melon, or whole wheat bread.
