A Roth Kase Superstar! this highly acclaimed award-winning cheese (1999 Best of Show - American Cheese Society Competition, First Place 2000 & 2004 World Cheese Championship) is hand-crafted in an imported copper vat and carefully cured in our affinage cellars. Our Master affineur selects certain wheels of Gruyere for additional aging (nine months or more), to create a rich, complex flavor with fruity and nutty undertones. Feature Grand Cru Gruyere Surchoix as the centerpiece on a cheese plate, and serve with a red or white Burgundy, Riesling or Gewurztraminer.
